- 1/2 head green lettuce (or romaine lettuce) in leaves

Colourful Salad

1 beet grated

- 5 pitted medjool dates.

White Bean Dip
- 1 can white kidney beans (cannellini beans) or dried 1 1/2 cups soaked (1-4 hours) and boiled until
soft
- 1/2 bunch parsley
- juice of 1/2 lemon
- 1 1/2 tbsp olive oil
- 1 clove garlic
- 1 tsp salt -
Chickpea Salad
- 1 can of chickpeas or 1 1/2 cups of dried chickpeas soaked (1 to 4 hours) and boiled until soft with a fork
- 2 ripe tomatoes
- 1 cup chopped cilantro
- 3/4 cup red onion chopped
- Juice of 2 limes
- 1 avocado
- 3 tbps olive oil
- 1 tsp salt
- 1 tsp garlic -
Caesar Inspired Salad
Salad base
- 1/2 head kale
